In the summer of 2026, Shedletskys enters its next chapter, upgrading their production processes to scale their core range of pickles. As part of this evolution, our original Leyton kitchen has become something new: a pure creative test space focused on small-batch experimental drops, limited culinary collaborations and digital education through The Brine Flight Online.
Pure fermentation and limited drops
We are moving our high-volume sauces to a new facility. This leaves our original East London kitchen completely free for pure culinary creation. So we're creating The Leyton Lab: a dedicated test space for small-batch experimental drops and live unpasteurized ferments.
Alongside this move, we're shifting to a limited release model for our website. That means we'll be unveiling new creations quarterly.
Jars will be highly limited. Once they sell out they will not return until the next season.

Leyton Lab Drop 001: The Final Kimchi
The dish that started it all, and the last batch we will ever make.
We have made the tough decision to stop producing our award-winning kimchi, but we wanted to go out with a bang.That's why we've held back a final 20kg of our last batch of kimchi and just let it ferment for nearly three months to develop an incredible, wild tang. Then, to make this final drop truly special, we rounded out the heat with the sweet mellowness of black garlic and an aged Japanese shoyu for ultimate umami depth.As always, our kimchi remains unpasteurised and additive-free to preserve the great taste and natural funk.This ultra-limited batch is packed into lovely, reusable glass Kilner jars.Pre-order now.
